Gorgeous Galettes

WHAT YOU NEED. For one galette that serves 6:

Pastry for one piecrust. Make it easy on yourself: buy those preformed, uncooked piecrusts that come in a long skinny box in the refrigerator section at the supermarket, near the pop-open cans of biscuits. Usually there are two in a box, packaged separately. Take one out about a half-hour ahead, because they’re easier to handle if they warm up a little. Reseal the box and save the other pastry for another time.
