Gorgeous Galettes



Berries of all kinds work best as a simple mound.

Larger fruits, such as peaches or nectarines or pears or plums or apples, can be cut in slices and arranged in a pretty pattern, if you like. And before I forget to mention this, in a pinch you can use canned fruit; apricots work especially well.

Combinations are fun. Blueberries and nectarines; apples and cranberries (add extra sugar), pears and purple or red plums. You might also like to add in toasted, chopped nuts.

And by the way, galettes are not just for dessert. You can use the very same technique to make a savory tart for a light supper or appetizer. For your filling, think in terms of empenadas, knishes, or samosas– that kind of thing. Chicken, leeks, and chutney. Cheese and sliced tomatoes. Sausage and mushrooms. Black beans, corn and tomatillos. Spinach, shallots and bacon. Zucchini, tomatoes and sweet peppers. Asparagus and diced ham. And so on.
