So over several experiments I made significant changes in the original recipe, and this is what I ended up with.

Darn Good Shrimp Chowder

3 – 4 slices bacon

2 cups chicken broth (mine is homemade)

1 8-ounce block of cream cheese

1 medium onion, diced

1 tablespoon olive oil

1 to 1-1/2 cups small cauliflower chunks (a size that will fit nicely on a soup spoon)
