5. Increase the heat to medium-high, and place the tomato slices carefully in the pan. Don’t crowd them. Cook about 2 minutes each side, and remove to a tray lined with paper towels. If you’re doing a second batch, place the tray in a very low oven (200 degrees) to keep warm meanwhile.
6. Serve just as is, or make a dipping sauce of mayonnaise blended with Dijon mustard and garlic (or pickle relish, or sriracha, or diced green chilies and adobo sauce, or — you get the idea).
