A Green Tomato Year

2. In a large skillet (cast iron, if you have one), add vegetable oil for frying. Start with about ½ cup, you may need to add more as you proceed. Heat to low while you do the next steps.

3. Lay out three wide, shallow bowls or other containers, and place the following ingredients in them. (The amounts I give here are for 4 medium tomatoes; if you have more tomatoes, you’ll need more stuff.)
