


Makes 8 to 10 tarts
Raisins are traditional, but you could also make these tarts with dried cranberries, in which case you’d have Cranberry Banbury Tarts.
1 cup raisins
1 cup sugar
1 egg, beaten
1 tablespoon melted butter
3 tablespoons fine cracker or bread crumbs
Juice and grated zest of 1 lemon
Pastry for a 1-crust pie
Mix together raisins, sugar, egg, butter, crumbs, and lemon juice and zest. This is your filling. Roll out pastry about 1/8 inch think and cut into 3-inch squares. Place 1 scant tablespoon of filling in the center and fold in half to make triangles; seal edges with water and cut a small X at the top. Bake at 350 degrees until browned, about 15 minutes. You could also use puff pastry instead of pie crust; bake at 400 degrees for about 12 minutes.
